Art of Cooking J-Term Day 12

(Sarah) Today we made a delicious Mexican inspired meal, we started off the day with our Salsa Verde. We used Serrano peppers, onions, fresh garlic, cilantro, and spices. We boiled it in water to soften it, and then stuck it in the blender. We then had the chance to add seasonings of our choice. Once our salsa was done, we seasoned cutlets of pork, seared each side, then put it in a pan with our salsa. While it was cooking, some of the groups made their own potatoes. We thinly sliced them, seasoned them, added olive oil, and stuck them in the oven for a little over an hour. We then took our pork off the stove, plated it, and stuck the leftover salsa in a bowl. While we were cooking our pork, the chefs had prepared rice, corn, chilaquiles, made their own tortilla chips, and cut up some queso fresco. Once every group was finished, we plated our dishes, and got to enjoy it. This was definitely one of the best things we've made so far. Once we finished eating, we got to eat some leftover cake, which was still moist and delicious. Once we finished and everything was cleaned up, we made our pizza dough for tomorrow. We used water, yeast, flour, and olive oil. It is now rising, and will be ready for our use tomorrow, cooking day 12.
(John) Overall, It was a great experience to learn how to make this specific style of salsa, especially with the serrano peppers, I never understood until this day on how this type of salsa was made. I particularly enjoyed seasoning my own Pork Chop, and finishing the cooking process of it by throwing it into the Salsa. For this day, we had a few potatoes to use for our dishes, and I decided to custom make them using Cajun Spice and baking them (after boiling them for 5 minutes) and serving them on the side of my plate, instead of in my salsa. This was another good day of cooking in the “Art of Cooking J-Term 2019” and I can’t wait for tomorrow.
